Notes 32)-- Operator/employees are not properly sanitizing all customer utensils(tea pots and some desert plates with gold finish). The tea pots are washed and stored in the bar area. NOTE:The main Dishwasher sanitizing soultion is @50ppm. Operator is concerned that the sanitizer leaves a risidual taste in the tea. Operator states that a chlorine odor is noted in the water and in pots. A conversation was held regarding volatility of chlorine and heat-cl-is heat labile in warm or hot water. The odor is not an idication of risidual left on utenisls.operator has been directed to 1. have the diswashing service provide Ph strips so that sanitizer can be properly dispensed. 2. properly measure and test sanit. Solution. 3. allow utensils to air dry. 68)--repair or replace restroom fan(s). The fan should draw out odor/air. At time of inspection, the fan(s) were on and using electricity, however, minimal if any air was being drawn out. NOTE this violation was noted and pointed out to operator at the time of opening restaurant(within the last 1.5 months).
